Serving vegetables in an interesting way, rather than just boiled, helps makes vegetables an enjoyable part of the meal rather than just a necessary addition. If you are following a low carbohydrate diet it also means you are less likely to miss the carbohydrate component of the meal.
All recipes serve 1 person. All recipes assume you have extra virgin olive oil, salt and pepper to hand. A portion of any fresh or frozen veg is 80g so vegetable serving portions through this sheet are based on that. You are very welcome to make double portions, you can not have too many veg on your plate!
