Pre-heat the oven to 180 degrees (Fan).
Lay the beetroot on to a baking tray, drizzle and toss in the tsp of olive oil.
Roast for 20minutes, or until they are soft when pierced with a fork.
Meanwhile mix the orange juice, lime juice, dijon mustard, ½ tbsp olive oil and a pinch of salt in a bowl.
When the beetroot are cooked allow them to cool slightly, serve and drizzle with the dressing.
