Carrot and Swede Mash (2 veg portions)

Ingredients

 80 g Carrot peeled and chopped
 80 g Swede peeled and chopped
 25 g Cream Cheese
 A Few Chives

(you can use a mix of carrots, parsnips, swede, turnip or sweet potato (although this has more carbs) to mix up the mash).

Method:

Boil the veg till tender, around 25mins

Drain, mash till smooth.

Mix through the cream cheese.

Garnish with chopped chives, and serve.
