Spiced Roasted Cauliflower With Tzatziki (5 veg portions)

This dish goes beautifully with Salmon!

 ¼ of a Cauliflower (about 160g) chopped into small florets.
 1 Large Carrot sliced thinly,
 ½ tsp Garam Masala
 ¼ tsp Tumeric
 ¼ tsp Ground Cumin
 7 Cherry Tomatoes

Preheat oven to 180 degrees (fan).

Place the cauliflower and carrots on a baking tray, toss with a drizzle of olive oil and bake for 10 minutes.

Meanwhile mix the spices together in a small bowl with a pinch of salt and pepper.

Remove the roasted veg from the oven, add in the cherry tomatoes and spice mix, tossing it all together.

Roast for a further 12minutes (this is the perfect time to add the salmon o the roasting tray if you are having it).

Meanwhile grate the cucumber, squeezing out as much water with your hands as possible.

In a bowl mix the cucumber with the yoghurt and mint, sprinkling of salt and pepper to taste.

Serve the spiced veg topped with the tzatziki.
