Roasted Carrots (2 veg portions)

 160 g Carrots peeled and sliced into batons
 1 tbsp Honey

Preheat oven to 180 degree (fan)

Lay the carrots on a baking tray, toss in a tsp of olive oil and bake for 20 minutes.

Remove from oven, pour over the honey and toss the carrots in it

Return to the oven till the carrots are soft but starting to brown - around another 10 minutes or so.
