Pre-heat the oven to 180 degrees (fan).
Lay the beetroot on a baking tray and drizzle with the 1tsp olive oil.
Roast the beetroot for approx. 25 minutes as a starting point, then check regularly until the beetroot are soft.
(Timing will vary depending on if vacuum packed or fresh beetroot are used and the size of the pieces)
Remove from the oven, toss with the goats cheese and walnuts.
Serve.
