Boil the water in a saucepan.
Add the broccoli, broad beans and peas (the water will cool as a result).
Bring back to the boil and simmer for 2minutes or until cooked but with texture.
Drain the water from the vegetables.
Add a tsp of olive oil to a frying pan, throw in the spring onion and courgette, stir fry for 2 minutes till softening.
Add in the broccoli, peas and beans and stir.
Remove from the heat and mix through the mint. Squeeze on some lemon juice if liked.
Serve.
